Our albacore tuna is pole-and-line caught in the Bay of Biscay and off the coast of South Africa by small boat fishermen. This tin was packed by hand with freshly ground ginger, umami-rich gluten-free soy sauce, a pinch of garlic, a splash of rice vinegar, and a touch of mirin by a cannery located in Northwest Spain, the heartland of the conservas tradition.
